Description

Gooey, cheesy chicken that is crispy on the outside and filled with warm, savory and spicy pimento cheese on the inside. Oh—and bacon.

Ingredients

  • 2 Tablespoons (heaping) Pimento Cheese
  • 2 Tablespoons Hot Sauce
  • 4 slices Bacon, Cooked Over Medium Heat Until Crispy, Then Diced (optional)
  • 2 whole Boneless Skinless Chicken Breasts, Trimmed Of Fat With A 2'' Pocket Sliced Through The Thickest Part Of The Breast
  • 1 dash Salt And Pepper
  • 1 Tablespoon Extra Virgin Olive Oil

Preparation

Preheat oven to 350 F.

Mix pimento cheese, hot sauce and bacon in a small bowl. Stuff the mixture into the pocket that you cut in the chicken breasts. Insert one or two toothpicks to keep the seam closed as much as possible.

Season the chicken breasts with salt and pepper.

In a skillet over medium-high heat, heat the olive oil. Add chicken to the hot oil and sauté chicken breasts for 2-3 minutes on each side until lightly brown and slightly crispy.

Place chicken and any excess cheese mixture that may have seeped out onto a baking sheet (use one with sides), and bake at 350 F for 12 minutes. Serve!
