Description

A quick, easy recipe that has less than 5 ingredients and is a cinch to whip up on a weeknight.

Ingredients

  • 8 ounces, weight Rotini Pasta (or Another Preferred Type)
  • 2 cups Mozzarella Cheese
  • 1 cup Thin Sliced Pepperoni, Sliced In Half
  • 26 ounces, fluid Spaghetti Sauce Of Your Choice

Preparation

Preheat oven to 375F.

Cook the pasta as directed on the box, drain and return to the pan. Measure out 1/4 cup of the cheese and a handful of the pepperoni, set aside.

Add the spaghetti sauce and remaining pepperoni to the pasta, stir until combined. Next, add in the mozzarella cheese and stir until melted. Pour the mixture into a rectangular baking dish, approximately 9×13. Top with the remaining cheese and bake for 10 minutes. Pull the pan from the oven and top with the reserved pepperoni and sprinkle onto the top like you would a pizza. Return to the oven and bake for another 10 minutes or until heated through.

If you prefer your pepperoni a little crisper you can put the dish under the broiler for a few minutes to allow it to brown the cheese and crisp up the pepperoni.

Fast and delicious! I had to cook mine for a bit longer, but I put it in a big, thick dish instead of a 9×13. My husband actually ate the leftovers, which he rarely does.
