This recipe is so easy, but tastes like you know your way around a kitchen! This is one of my favorite recipes for entertaining.
Melt butter in large skillet. When butter foams, add the chopped pancetta. Sauté over medium heat until lightly colored. Add the vodka and stir until it has evaporated. Stir in tomato sauce and cream. Simmer uncovered 8 to 10 minutes. Season to taste with salt and freshly ground pepper.
Cook pasta according to package directions. Drain pasta and transfer to the skillet with the sauce. Toss the pasta in the sauce over medium heat until completely coated, about 1 minute. Serve immediately with grated Asiago cheese.
