Pasta is tossed with fresh, seasonal veggies and herbs instead of a heavy sauce. This is a light and flavorful dish, perfect for summer.
Bring a pot of salted water to a boil. Chop the vegetables into bite-sized pieces.
Heat the oil in a large skillet over medium heat. Add the garlic and stir to coat with oil. Add the chopped vegetables and cook until they begin to brown, approximately 8 to 10 minutes. Salt and pepper the vegetables.
Meanwhile, add pasta to boiling water. Cook until al dente, according to directions on package. Drain spaghetti and reserve about half a cup of the pasta water. Toss the pasta in the pan with the vegetables. If the pasta is dry, add a little bit of the pasta water. Right before serving, stir in the chopped herbs. Top each serving with freshly grated cheese.
