Description

My husband and I enjoy our Jersey tomatoes every summer. We usually put cream cheese on a bagel and top with tomatoes and salt and pepper. Thought I’d take that and somehow use it with pasta. End result: absolutely delicious!

Ingredients

  • ½ pounds Pasta
  • 4 ounces, weight Cream Cheese
  • ¼ cups Pasta Water
  • ¼ cups Parmesan Cheese
  • Salt And Pepper, to taste
  • 1 Tablespoon Parsley
  • 18 whole Grape Tomatoes

Preparation

Boil your pasta. Place cream cheese in a serving bowl. Once pasta is done, pour it over top of the cream cheese. Add pasta water. Stir until cream cheese is completely melted and covers all the pasta. Add the parmesan cheese, salt, pepper, and parsley. Mix that in with the pasta. Add tomatoes. Stir and enjoy!

Recipe can totally be doubled to make more!

I made this for dinner tonight. It was super simple and tasty. I added fresh basil from my garden instead of parsley as well as chopped Roma tomatoes rather than grape. Some grilled chicken on top would be perfect!
