Description

It’s a sauteed mushroom mixture mixed with your favorite pasta and topped with huge chunks of Parmesan cheese. It’s satisfying, delicious and a nice change from the traditional tomato sauce!

Ingredients

  • 4 ounces, weight Fusilli Pasta
  • 5 Tablespoons Olive Oil, Divided
  • ½  Onion, Finely Diced
  • 2 cloves Large Cloves Garlic, Minced
  • 7  Large Button Mushrooms Sliced
  • Salt (for Seasoning)
  • 5  Artichoke Hearts (from The Jar), Roughly Chopped
  • 2 Tablespoons Parsley, Minced
  • Parmesan Cheese For Garnish

Preparation

Choose the type of pasta you like best. I chose Fusilli pasta and followed it’s cooking instructions to make enough for 2 servings.

Heat 3 tablespoons of the oil in a pan and add the onion. Cook the onion for 2-3 minutes until they begin to become translucent. Add the garlic to the pan and cook for just a minute along with the onion.

Place the mushrooms in the pan in an even layer and season them with salt. Cook for 5 minutes while tossing them about occasionally.

Add the artichoke hearts and continue cooking for 5 minutes or until the mushrooms are completely cooked through. In the last moment, toss the parsley into the pan.

In a large bowl, add the pasta, the mushroom mixture and the remaining oil. Season the pasta to your liking with salt.

Serve the pasta with large chunks of parmesan cheese.
