Description

The combination of the brown sugar, cinnamon and cumin in this rub is wondrous.

Ingredients

  • 4 whole 6-ounce Salmon Fillets, Skinned
  • 2 Tablespoons Brown Sugar
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Fresh Ground Black Pepper
  • ½ teaspoons Ground Cumin
  • ¼ teaspoons Dry Mustard
  • ⅛ teaspoons Ground Cinnamon
  • 1 Tablespoon Olive Oil

Preparation

Preheat oven to 350 degrees F.

Combine brown sugar, salt and spices in a small bowl. Rub spice mixture on the top side (non-skin) of the salmon fillets.

Sear fillets, rub-side down, in oil in a large oven-proof non-stick skillet over high heat. When the fish releases easily and rub side is browned, about 2 minutes, flip fillets and transfer pan to the oven.

Roast fillets until they flake easily with a fork, about 5-6 minutes.

Flavors were great! I did just quickly grill them instead of pan roasting but it was still delicious!

This salmon is sooo good! I would give it 6 starts if I could. I made this for Thanksgiving (because I eat fish, not meat.) Everyone loved it. It’s been my go-to salmon recipe ever since, and it is always a hit. Plus, it couldn’t be easier to make.
