Description

A delicious and easy side dish!

Ingredients

  • 3 Tablespoons Butter
  • 1-½ cup Orzo Pasta
  • 3 cups Chicken Or Vegetable Stock
  • 6 Tablespoons Fresh Basil (or 2 Teaspoons Of Dried)
  • ½ cups Freshly Grated Parmesan
  • Salt And Pepper, to taste

Preparation

Melt the butter over medium high heat. Add the orzo and saute for several minutes, until the orzo starts to become golden brown. Add the broth, cover and simmer for about 20 minutes, or until the orzo has absorbed all of the broth. Remove from heat, add the basil and parmesan, and season with salt and pepper to your liking. Add more parmesan if you want it to be really gooey and cheesy.

This orzo is SO good. It will serve 4 very healthy portions (although my honey and I can eat one batch by ourselves – piggish, right?), but if you’re having company, make sure you double the recipe. Enjoy!

I make this recipe often. It goes great with Fish, Chicken or Meatballs in tomato sauce. So easy to mkae and so delicious!

This was very good and very easy! I served it along side of salmon. I agree with the review to use less broth. It took longer than 20 minutes. I lost patience and just drained out the excess broth.

Delicious! I think next time i may use a mixture of fresh herbs. Also, it took a lot longer than 20 minutes for the broth to absorb. Next time i would add less broth so the orzo doesn’t get over-cooked!

Much better than I expected! I used Parmesan and fresh parsley. Next time I’d add in mushrooms and possibly chicken, which would take it from side dish to lunch.
