A one-skillet, healthy meal for your whole family.
Heat 1 teaspoon of vegetable oil in a non-stick skillet over medium-high heat. Add chicken and cook through, turning once, until golden brown in color. Depending on how thick your chicken is, this will take at least 5 minutes per side. Remove chicken to a plate and tent with foil to keep warm.
Heat remaining 1 teaspoon of oil in the same skillet. Then add pears, and cook till softened and golden brown. In a liquid measuring cup, measure out 1 cup of chicken broth. Add vinegar, cornstarch, and sugar and mix well with a fork. Add broth mixture and dried fruit to pears in the skillet. Heat to boiling while stirring constantly. Then boil 1 minute or until thickened. Return chicken to skillet, coat in sauce, and heat through. Serve.
