Chicken thighs lacquered in a red wine sauce set atop roasted root vegetables. My husband and kids’ favorite new meal!
Preheat oven to 375ºF.
Cut the regular (skin on) and sweet potatoes (peeled) into bite size chunks. Peel and slice carrots into 1/4 inch rounds. Peel and cut onion into bite size chunks. Slice cherry tomatoes in half. Peel and finely mince garlic. Add all of the first 7 ingredients into a large heavy pot with a lid. Arrange chicken on top and sprinkle with salt and pepper. Pour vinegar, oil and wine over top. Top with fresh herbs. Pop the lid on and bake for 1 1/2 hours.
