Description

Super simple, delicious and fast recipe for one-pot pasta Bolognese style with ribbon pasta and ricotta topping. All you need is one pot or crockpot.

Ingredients

  • 4 Tablespoons Olive Oil
  • 500 grams Minced Meat
  • 2  Onions, Diced Very Finely
  • 2 cloves Garlic, Minced
  • 3  Carrots, Diced Very Finely
  • 150 grams Celeriac, Diced Very Finely
  • 3 Tablespoons Fresh Oregano Leaves, Chopped Very Finely
  • Sweet Paprika Powder, To Taste
  • Salt And Pepper, to taste
  • 2 Tablespoons Tomato Paste
  • 500 milliliters Vegetable Broth
  • 2 cans (425ml Size) Finely Chopped Tomatoes
  • 150 grams Ribbon Noodles, Mafaldine Or Reginette
  • 150 grams Ricotta, Italian Cream Cheese
  • 200 grams Crème Fraiche
  • Sugar, To Taste
  • 75 grams Parmesan
  • 6 stalks Basil, Leaves Only

Preparation

Heat olive oil in a large pot or crockpot and fry the minced meat. Add onions, garlic, carrots and celeriac, and sauté briefly. Add oregano and season with paprika powder, salt and pepper.

Stir in tomato paste and simmer briefly. Add vegetable broth and chopped tomatoes. Bring to the boil, then stir in noodles. Simmer for 8 to 10 minutes or until pasta is al dente.

Mix ricotta and cream fraiche. Season with salt, pepper, sugar and paprika powder.

Transfer the pasta to a large bowl. Serve with 1 to 2 spoons of ricotta cream fraiche mixture. Sprinkle with Parmesan, garnish with basil, and serve with the remaining cream.
