Description

This is a great way to make something quick, tasty and easy out of left over brown rice and chicken. If you enjoy fajitas, you will enjoy this! This recipe is brought to you by Adventures in Lunch.

Ingredients

  • 1 teaspoon Olive Oil
  • ½ cups Bell Peppers, Any Color Or All Three, Sliced
  • ½ cups Leftover Cooked Chicken, Sliced
  • 1 cup Prepared Brown Rice
  • 1 teaspoon Chili Powder
  • ½ teaspoons Cumin
  • ½ teaspoons Paprika
  • Salt And Pepper, to taste
  • ¼ teaspoons Lime Juice

Preparation

Heat the olive oil in a small sauce pan over medium heat.
Add peppers and cook for about 3 minutes. Add the cooked leftover chicken and cook until heated through, about another minute. Add the rice, seasonings and lime juice. Cook another 3 minutes, stirring frequently.

It doesn’t have to be fresh – you can use the stuff that comes in the false lime at the grocery store. You could even substitute lemon, if that’s all you have on hand.

It was soo good, we had no paprika so i had to improvise, but i do believe it would of been the best, if i added more seasoning of chili powder and cumin, because i made a big skillet of it. But other than that, YUM!!! :D
