Description

Fight the heat wave with cold southwestern chicken salad. It’s a winner!

Ingredients

  • 1 pound Cooked, Shredded Chicken
  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • 1 can (4 Oz. Size) Diced Green Chiles, Don't Drain
  • 1 cup Shredded Monterey Jack Cheese
  • ⅓ cups Sour Cream. I Use Light.
  • ⅓ cups Mayonnaise (I Use Light)
  • 2 Tablespoons Taco Seasoning
  • 1 whole Lime, Juiced (zest Optional)

Preparation

In a large bowl combine cooked chicken, black beans, green chiles, and cheese. Stir in sour cream, mayonnaise, taco seasoning and lime juice. Combine well.

Serve with tortilla chips or tostada shells and garnish with lime wedges and/or sliced olives.

Tried this tonight…threw the chicken, sauce, beans and chilis back into a frying pan (where I had poached the chicken to get the shredded) topped with the cheese to warm it all (it is January after all!) and then served on fresh romaine lettuce. Yum. DH and DS both liked it too.

Yum! You have fulfilled one of my many pregnancy cravings. I can’t get enough Mexican/TexMex food! I’ve made 3 batches of salsa and 2 black bean dips in 1 week! LOL!! This is next on my list of dips =)

Made this tonight. Was looking for something different, for fun. This was fun, and easy to throw together (always a plus in my book). Thought I had a can of beans but I didn’t, so I used corn instead. I also left out the chiles since 3 of us don’t like them. I really understand how leaving them out changed the recipe, so it’s not a “full” review here. This was good. Thanks.

Yum-o! I doubled the recipe and took it to the lake over the weekend – huge hit! I made it just as listed and ate with chips and/or in a fajita size tortilla. I plan on making it for tailgating, too!

Not bad but not as spectacular as I thought given the other reviews. I think maybe I would cut back on the amount of taco seasoning….

Yum! Made it exactly according to instructions, ate by the pool with tortilla chips… perfect summer meal! I love that it is chicken salad but it wasn’t TOO mayo-y.
