We refer to this as the Mexican Chicken Parmesan. I’m not a cook….that’s why I’m here because I want to be. But everyone I’ve ever made this for loves it. Serve with Spanish Rice and Mexican Corn.
Preheat oven to 350 degrees.
In a shallow baking dish melt the butter in the preheating oven.
Whisk the egg, dredge the chicken breasts in the egg then roll them in the crushed nacho chips.
Place the chicken in the melted butter, in a single layer in the baking dish. Bake for 10 minutes. Turn and cook for an additional 10 minutes. Remove from the oven and cover with salsa and cheese. Bake 10 more minutes or until the cheese is melted.
This recipe can be modified to suit your family’s taste. I’ve used spicy Doritos and hot picante for adults who enjoy a kick. I’ve used Pam cooking spray, egg beaters, low fat cheese and baked tortilla chips to keep the calories down. It’s very versatile and always a hit!

Just finished eating this amazing chicken. Actually, I made it using Gardein – a fake chicken (vegetarian) product and it was delish! I served it with rice and beans and a side of mango. The husband loved it.
