This meatloaf is amazing. The ketchup gravy makes it wonderful. It is even better as leftovers with the ketchup for dipping sauce!

My absolute favorite, of all your recipes!
I think I love the fact that you put bacon and the best Katchup Sauce I’ve ever tasted on this, and it comes out so moist… Now ALL restraunt meatloaf tastes too dry!

Did not turn out great – way too moist and had a very strange texture to me. The ketchup sauce was awesome, and the bacon was fun… meatloaf… well, next time I will make my regular meatloaf and just put the bacon and ketchup sauce on it!

Good recipe and awesome ketchup/brown sugar/dry mustard sauce. Made without the bacon; not sure if this completely changed the taste or not. For me, the milk-soaked bread was an element that I didn’t really enjoy…something about the texture, wasn’t a fan. I think the next time I make this, I will omit the bread and bacon, and add some white onion and worcheshire sauce to give it a little more kick.

First of all, I love that as you are coating the “loaf” with the sauce it begins to take on an Armadillo sort of look. Ha! Roadkill for dinner!
I didn’t use the tabasco, it’s just not something that we keep in the house. Other than that, the only change I made was to halve the recipe to better suit our family. Unfortunately, becasue I had a smaller “loaf” I didn’t realize it didn’t sit on top of the slits in the pan until after I cut into the “loaf” and it was really greasy and soft. It was centered on the pan so next time I will position it better over the slats. To fix my problem I just stuck the first slice in the microwave over a papertowel and that took care of it and the rest sat in the oven just a little longer. The other thing I will do better next time is to be more fugal with my first application of sauce to let the bacon cook better and then slather it on to the fullest for the second. You cook and learn!

We liked the bacon on top and the sauce- that’s a keeper for sure. However, the milk and Parmesan cheese gave the meatloaf a weird ‘wang’, as we say down here. It tasted sharply sour. I’ve never had a meatloaf with that taste.

Wow! I’ve been making the same meatloaf recipe for awhile now and my family loves it, but this might just replace it. I didn’t have a pan with slits in it, so I just cooked it on my barpan. (10×15 stoneware) I made a larger meatloaf so I added some more of the other ingredients too. It ended up making about 12 servings, and it was SO good! I’m eating it right now for lunch the next day, and it is just fabulous. 5 mitts for sure!

I don’t know what I did wrong, but this took me FOREVER to cook! And I even had the recipe halved since it is just me and hubby.
I also was out of brown sugar so I had to make my own with white sugar and molasses….which interesting enough, made a nice, caramlized yet gooey topping!
I am not a meatloaf fan so I had high hopes for this. My husband said it was good. I ate it and din’t hate it so that’s a plus! I just wish I could figure out why it took so much longer for me to cook. I had to keep up-ing the temp. on my oven too.
All in all, I would say, if you aren’t sure about meatloaf, give this a try, you’ll probably be surprised.

My daughter and I made this and let me tell you, it was incredible. My husband despises meatloaf, but was completely surprised when he took a bite. The tangy sauce with a kick and bacon flavors really set it apart.
Can’t wait to make it more this Winter!

This is almost the same way I do my meatloaf, only I add diced green chilies to the meat mixture…..yum!

I made this last week and it was awesome! I made meatloaf for the first time a few years ago and it was terrible so I never revisited it. All my boys (including my husband) loved this one. It’s definitely a keeper.
I had never done the bread soaked in milk before but it turned out so well I was wondering if you think the same could be used in meatballs? I usually use breadcrumbs but this was so moist I’m thinking of trying it with the bread instead.

I’m interested in making mini meatloafs (meatloaves?) ? Any ideas on how long to cook them for? In ramekins? On the rack? I just don’t have enough people in my immediate family to justify a full meatloaf!

I’m 60 years old and I’ve made a lot of meatloaf through the years. I made this at the suggestion of my daughter who had tried it. It was wonderful! The only thing I changed was to use 1 pound of ground beef and 1 pound of ground chuck . I will definitely be making it again.

Made this tonight and it was delicious! Made a few alterations after reading the reviews here. Cut down the milk by about half and only added a 1/4 cup of parmesan. Only used 3 eggs and added about a teaspoon and a 1/2 of Dijon mustard in place of the 4th. We didn’t have any flat leaf parsley so I added fresh sage, oregano and thyme instead along with a splash of Worcestershire sauce and some Tabasco as well as a finely diced red onion. We also can’t get thin or streaky bacon here in Aus, only middle bacon, so I used panchetta instead and it was delish! Will be making this one again for sure!

A few things about your favorite meatloaf. While I agree its a very good name for it, might I suggest renaming it:
‘Get a husband meatloaf!’
I’ve never in my life wrote a review on amazon or on ebay about delivery service let alone on a recipe board but OH MY GOD, this meatloaf! It rocks my pink bunny socks. (if I had pink bunny socks that is)
Being 40 I’ve both eaten & cooked of meatloaf in my life, but none like this one. The boyfriend exclaimed that it was the best meatloaf he has ever had.
The pictures are so helpful and your comments keep me laughing.

I made this last night and I all I can say is ……WOW! My family loved it, but it did take a lot longer to bake in my oven. We will make this again and again!!

first time commenter here! i loved this meatloaf. i made it last night and it was delish. it did, however, take almost 2 hrs to cook to the desired temp for well-done beef. i don’t get it. i know my oven runs consistantly 5 degrees cool, so i bumped the temp up to 355. it’s not just THIS recipe, but it seems it’s like this with every meatloaf recipe i make. any suggestions?
