Description

One of my favorite comfort foods. I love this stuff.

Ingredients

  • Meatloaf:
  • 1 cup Whole Milk
  • 6 slices White Bread
  • 2 pounds Ground Beef
  • 1 cup (heaping) Freshly Grated Parmesan Cheese
  • ¼ teaspoons Seasoned Salt
  • ¾ teaspoons Salt
  • Freshly Ground Black Pepper
  • ⅓ cups Minced Flat-leaf Parsley
  • 4 whole Eggs, Beaten
  • 10 slices Thin/regular Bacon
  • Sauce:
  • 1-½ cup Ketchup
  • ⅓ cups Brown Sugar
  • 1 teaspoon Dry Mustard
  • Tabasco To Taste

Preparation

Preheat oven to 350 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.

Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.

With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)

Lay bacon slices over the top, tucking them underneath the meatloaf.

Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.

Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.

Serve with mashed potatoes. Yummy!

I tried this reluctantly, as meatloaf is something I am so not keen on, yet my family love it.
I wanted something different to add to our menu (being from the UK, meatloaf was not a typical food we ate, nor was it in my Books in culinary art school)
All I can say is “WOW” !! – my family LOVED it, and I surprised myself by liking it too – I have used Ree’s recipes before, and we especially like the Lasagna recipe, but meatloaf is right up there now as a staple for the winter!

A big hit in our house! After reading other comments I decided to split it into 2 loaves & was sure to make it flat like you did on your show. Turned out perfect in the time you listed.. Definitely a keeper!

This is now MY favorite meatloaf too! The ONLY changes I made was increase both salts and add a medium diced onion. I even used my broiler pan for the first time just for this! It took quite a bit longer for mine to come to temperature (close to 90 minutes) … but maybe I need to find my oven thermometer … I’m certainly not going to blame the onion. Next time I make it I will freeze half of it simply because it can feed an army. Best meatloaf sandwiches the next day too. Thank you!

I made this for the first time last night after seeing it on the show and in the cookbook. Super easy, delicious, no fail recipe! My husband took one bite and said, this is really good!

I agree with other reviewers on doubling the sauce – if you’re serving this to more than 3 people, the remaining 1/3 of sauce for dipping is not going to be enough. Thank you for this recipe!

Was disappointed in the recipe. The Parmesan cheese gave a strange flavor to the meat loaf. It was a “eat what’s on your plate” moment with lots leftover. Had to bake the meatloaf longer than the 1 hour suggested in the recipe. Will stick with my recipe that has the family going back for seconds.

Love this meatloaf! It now our “go-to” meatloaf recipe. Very easy and delicious. I think the parmesan is what gives it the flavor. We do put the bacon on top because I think it adds to the overall meatloaf but I do tend to pull it off because it gets a little mushy and I am not a mushy bacon person. Great though and I do make this often!

I’m not a big meatloaf person but this was awesome! My husband is a big meatloaf lover and he loved it too! The ketchup gravy/glaze gives it that special something and the bacon gives it such a good flavor. The bacon, however will tint the beef on top pink so it doesn’t look done but we just used a meat thermometer to make sure it reached proper temperature. Great recipe!
