Delicious comforting meatloaf, made lighter with ground turkey. Portion control made easy my using a muffin tin.
Preheat oven to 350ºF. Line a muffin tin with muffin/cupcake liners. Spray each liner with nonstick cooking spray.
In a large bowl, combine the egg, milk, cheese, oats and seasonings. Add the ground turkey, mixing well.
Using an ice cream scoop, fill each liner with 1 large scoop of the meat mixture.
Bake for 25-30 minutes. During the last 5 minutes of baking, add a spoonful of ketchup to each loaf. Serve immediately.
Makes 6 servings of 2 mini loaves each. Each serving 247 calories.
