Mexican Crockpot Chicken

Description

SO easy and so yummy, even kids will love it!

Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1 can (15 Oz. Can) Black Beans (NOT Drained)
  • 1 jar (16 Oz. Jar) Salsa
  • 1 can (8.5 Oz. Can) Corn, Drained
  • 1 block (8 Oz. Block) Velveeta (or Cream Cheese)

Preparation

Add the black beans (and liquid) to the crockpot.

Add salsa. (If you have a child that doesn’t like “chunks,” just throw it in a blender before adding it).

Add corn.

Stir until mixed.

Add chicken breasts. (Can even be frozen!)

Cover and cook on low for 4-6 hours (or longer if need be).

Before I add the cheese, I like to remove the chicken and pull it apart with 2 forks. This is very easy because the chicken is falling apart by this point.

Return the pulled chicken to the pot. Add the block of cream cheese or Velveeta about 30 minutes prior to serving.

Stir well and serve with rice, tortillas, corn chips, on top of lettuce. This is good so many different ways!

This was delicious and EASY! I added cumin and used frozen corn. My husband loved it even though he doesn’t like black beans.

So simple, yet so delicious and versatile. I was short on time so cooked it on high for 3 hours and it came out great. We had it over white rice this time and will try yellow rice with the second blessings (leftovers). DH suggested using it for burrito filling with more cheese melted on top! Endless yummy possibilities! Thanks for sharing.

This was FANTASTIC! My hubby absolutely loved it. It was so easy to make. I used cream cheese and served it over rice. I will definitely be adding this to our dinner rotation. I think next time I might try it on tortilla chips. I think it would make a GREAT chicken nacho filling maybe with some sour cream and guacamole on top. Thanks SO much for sharing.

We all liked this and each ate it as they liked it. Hubby on chips, daughter from a bowl, mine in a tortilla. I used Ro-tel instead of salsa because that’s what I had. Also added an onion. I strained out some of the juice so it would be plenty cheesy. Very tasty!
