My friend Matt made these when we went camping one time (if you can’t tell from the title) and they were GOOD! Spicy and tangy, unlike normal ribs.
Rub: Combine brown sugar, chili powder, salt, and pepper and apply as a rub to the ribs before cooking.
Sauce: Mince jalapenos and combine with the remaining ingredients (except ribs, obviously) in a saucepan on medium heat. Allow sauce to simmer for about 8 minutes so all ingredients are well mixed.
Grill ribs on medium heat, about 2 hours for beef ribs and about 1 hour for pork ribs. Apply sauce to ribs every 15 minutes. Serve the rest of the sauce with the ribs!
You can prepare the rub and sauce ahead of time. When we went camping, Matt had the ribs with the rub on them in one container and the sauce in another so that he could cook them at the site!
