Description

Easy. Low-fat. Delicious. What more could you ask for? Okay, maybe a million dollars.

Ingredients

  • 8 ounces, weight Ronzoni Thin Spaghetti
  • ½ cups Kraft Light Zesty Italian Dressing, Divided
  • 1 teaspoon Red Pepper Flakes
  • 3 cloves Garlic, Minced
  • 1 whole Small Red Onion, Cut Thin
  • 2 cups Baby Bella Mushrooms, Sliced
  • 1 pound Jumbo Shrimp, Cleaned, Peeled And Deveined
  • 1 whole Lemon, Juiced
  • 2 Tablespoons Italian Parsley, Chopped

Preparation

1. Cook pasta according to package instructions.

2. Heat 1/2 cup of zesty dressing in a pan over medium heat.

3. Add red pepper flakes and garlic. Saute for a couple of minutes.

4. Add the sliced onion and mushrooms and saute together until onions are tender crisp.

5. Add the shrimp, toss. Cook until shrimp is heated and has turned pink. Add a little sea salt and ground pepper for taste.

6. Drain the pasta.

7. Combine the pasta with the shrimp, vegetables and sauce in a large bowl and together. Squeeze fresh lemon juice over the top and toss in the parsley.

You can salt and pepper more to taste, and even add some reduced fat parmesan if you’d like.

I had to leave the onion out since my family doesn’t like them, but other than that it was good and very easy to make.

I made something like this tonight… I didn’t have all your ingredients coz I don’t live in the USA but I made it with wild mushrooms which I dry fried first, artichokes in oil, a white onion and a bag of mixed seafood I ahd in the freezer. So not quite what you did but all variations on it and the combination was DELICIOUS! I added the chilli flakes and a drop of lemon juice, grated some parmesan on at the end and it was ready to go. And my husband loved it. Thanks for the inspiration! :)
