Description

A lighter, healthier version of classic Shrimp Scampi.

Ingredients

  • 6 ounces, weight Angel Hair Pasta
  • 2 Tablespoons Olive Oil
  • 1 whole Onion, Diced
  • 2 cloves Garlic, Minced
  • ½ teaspoons Red Pepper Flakes
  • 1 pound Peeled And Deveined Shrimp, Medium Size (Fresh Or Frozen)
  • 3 Tablespoons Lemon Juice
  • ⅓ cups White Wine
  • ½ cups Freshly Chopped Parsley

Preparation

Cook your angel hair pasta according to the package directions. When done, drain it and set aside.

Heat up your olive oil in a skillet on medium-high heat. Add the onion, garlic, and red pepper flakes. Stir around and let onions slightly brown, for about 2 minutes. Place shrimp in the pan, and allow them to cook for about 3 1/2 minutes, flipping halfway through. Pour in your lemon juice, white wine, and half of your fresh parsley. Stir and continue to cook for another minute.

Toss in your cooked angel hair pasta and mix to combine. Sprinkle on remaining chopped parsley.

One of my favorite dishes, but I don’t usually have it because it’s so unhealthy so I really love the idea of a lighter version. Thanks so much for sharing this recipe.
