Description

Chicken Marsala is one of my favorite recipes EVER! This recipe allows me to enjoy it without letting it go to the hips!

Ingredients

  • 4 whole Chicken Breasts
  • 1 cup Flour
  • 1 Tablespoon Olive Oil
  • 8 ounces, weight Mushrooms, Sliced
  • ¾ cups Marsala Wine
  • ¾ cups Chicken Broth
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • ¼ cups Parsley, Chopped

Preparation

Pound the chicken breasts down to 1/4 inch thickness and season with salt and pepper. Place flour in a shallow bowl and coat the chicken evenly, shaking off excess flour.

Heat olive oil in a large pan and add chicken. Cook for 3 to 4 minutes on each side until golden brown. Remove the chicken from the pan and keep warm.

Add more oil to the pan and saute the mushrooms until golden brown. Stir in marsala wine and chicken broth. Cook the liquid until it has reduced to about 1/2 cup.

Season with salt, pepper and parsley. Pour the sauce/mushrooms over the chicken and enjoy!

Chicken Marsala is one of my favorite dishes. My husband and daughter did not like my recipe as much which had red wine or sherry in it. This one is perfect for everyone because it is lighter and it tasted better. They said it was the best they ever had. Thanks for sharing!

This was so yummy! I love chicken marsala and I wasn’t sure you could make it without butter, but the flavor was great. Will make again and again!
