Description

Pasta with a little zing!

Ingredients

  • 12 ounces, weight Penne Rigate
  • 2 Tablespoons Olive Oil, Divided
  • 1 whole Red Pepper, Chopped
  • ½ cups Onion, Diced
  • 2 cloves Garlic, Minced
  • 1 whole Lemon, Juiced
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Oregano
  • 2 cups Baby Spinach
  • 1 teaspoon Salt, Or To Taste
  • ¼ teaspoons Pepper
  • 1 teaspoon Red Pepper Flakes
  • ¼ cups Parmesan

Preparation

Cook pasta according to package directions. Add 1 tablespoon of olive oil to a pan and saute red pepper and onion for about 5 minutes over medium/low heat. Add garlic and cook for 1 minute.

Once pasta is complete, add the pasta to the red pepper and onion mixture. Add lemon juice, the remaining tablespoon of olive oil, Italian seasoning and oregano. Mix well. Add in baby spinach and cook over low heat for about 4–5 minutes, until spinach wilts. Add salt, pepper and red pepper flakes.

You can add parmesan to the dish or to each individual serving. Adjust salt and pepper to your liking. Enjoy!

Thank you, this was delicious and has all my favorite pasta ingredients in it! Lemon and spinach is always a winner! I added more garlic (4 cloves)and shallot instead of onion simply because I had some to use up. The lemon flavor was light, very good and I added a little zest from the lemon for a bit more of the lemon flavor. My husband and 8 yr old son enjoyed this very much , as did I. I served it as a side dish with crispy balsamic chicken and garlic bread. I will use this recipe regularly, thanks again! :)
