Description

Grilled chicken adds extra flavor to this simple and easy-to-put-together pasta salad.

Ingredients

  • 12 ounces, weight Small-sized Pasta Shapes
  • 1 whole Fryer Chicken, Sprinkled With Salt And Pepper And Lemon Juice
  • 1 whole Green Pepper, Diced
  • ¼ cups Diced Green Onions
  • ¾ cups Mayonnaise
  • ¾ cups Sour Cream
  • ¼ cups Ranch Dressing
  • 2 whole Lemons, Juiced
  • ¼ cups Fresh Parsley, Loosely Choped
  • 2 pinches Salt And Pepper, to taste

Preparation

Grill chicken until juices run clear. Allow to cool. Meanwhile, cook the pasta according to package directions. Drain and rinse well with cold water.

Pull chicken apart into small pieces. (I prefer pulled chicken to diced because it holds on to the pasta pieces better.) Mix together mayonnaise, sour cream, ranch dressing, lemon juice, parsley and add salt and pepper as you see fit.

In a large bowl, mix together pasta, chicken pieces, green pepper and diced green onions. Add dressing and stir until well coated. Store in the refrigerator until ready to use.

This was the perfect pasta salad to bring to a dinner get-together the other night! Sure was a crowd pleaser.

I don’t usually go for a creamy dressing for pasta salad (I’m a vinaigrette kind of girl), but this was perfect. The lemon juice cuts the heaviness of the sour cream, mayo and ranch.

I didn’t have a bell pepper or green onion, so I substituted green peas and sweet onion, and it was delicious. I also added lots of fresh ground black pepper, so it was like lemon pepper chicken. Yum!
