This dish just screams “SPRING” … or “EAT ME.” I served it with my jahjeek (Iraqi cucumber salad) and they made a perfect pairing.
I don’t have a picture because my two ravenous guys devoured it before I could get the camera ready. Yeah, it’s that good.
Preheat the oven to 375F.
Pour the olive oil into a Pyrex baking dish.
Slice the lemon into 8 wheels.
Peel and chop the ginger into 8 chunks.
Mix the dill, salt, and pepper in a bowl.
Rub each chicken breast with the dill mixture and place in the baking dish.
Put two chunks of ginger on each breast. Then top each ginger chunk with a lemon wheel.
Wedge the onion and tomato and arrange around the breasts.
Cover with aluminum foil and bake for 15 minutes.
Remove the foil and bake for 20-25 minutes longer.
Remove from the oven. Slice and enjoy.
