Sundays are pretty great. I consider myself somewhat blessed to have a husband in the ministry. Don’t get me wrong, I’m all about cooking. And family. But it’s kinda nice to have the place to myself on Sundays. I don’t have to deal with anything in the afternoons and evenings. Except myself. And my bath tub. And that’s okay by me. Cook less, rest more. “And all God’s people said, ‘Amen.'”
1. Cook noodles according to package directions.
2. In a separate pan, combine garlic and olive oil. Turn heat on medium low and let the two get to know each other. Once the garlic starts to brown even a little bit, take it off the heat immediately. Garlic cooks quick.
3. Add a small splash of the balsamic vinegar. We’re talking about a teaspoon. This stuff is strong, but it adds a nice kick to it.
4. Stir in some basil, thyme, salt and pepper.
5. Drain noodles and put back in the pan they were boiled in.
6. Squeeze the lemon so the juice goes over the noodles and mix well with 2 forks.
7. Stir in olive oil mixture and mix well.
8. Add Parmesan. Mix again.
9. Place spaghetti on serving dish. Top with a dash more of the basil and thyme.
10. Optional: add a bit of lime zest to make it even sweeter.
