This is a delish new recipe for those who are trying to lose weight yet still have a comfort food.
In a large pot start your lasagna noodles and cook until al dente. I suggest adding a little oil to your water so that the noodles don’t stick together.
In another medium size pot add some water, your fresh spinach and grate in the garlic. Let them cook for about 5 minutes. Remove the spinach and put in a blender and puree it. Add the spinach puree to the cottage cheese, add your parmesan cheese, 1 cup of mozzarella and the oregano. Mix together.
Take your lasagna noodle, lay it flat and spread about 1 or 2 tablespoons of the mixture across the noodle. Roll the lasagna noodle up like you would a pin wheel sandwich. Place in a 9×13 baking dish. Follow the same steps for each additional noodle.
Once all of the noodle rolls are in the baking dish, pour your spaghetti sauce on top and then sprinkle the rest of the mozzarella cheese. I cover with aluminum foil and place in the oven at 350 for 20 minutes and then uncover for the remaining 10.

didn’t know if I should put this here or in the review (oh well)
Just a couple of things… Next time I’ll blend the stuffing with some of the Spaghetti Sauce just to get rid of the green look (the kids wouldn’t eat it (boo!)).
The other thing is I used your recipe to a “T “and I had enough left over that we had it the following week too! (this is not a bad thing though (smiles)) but next time I’ll just cut the recipe in half.
Great Recipe, Will definatly make again!
