Description

If you are a mom and have a busy schedule like myself, and have a house full of picky eaters, then here is a quick, yummy recipe that will become a regular in your menu. It’s also great as leftovers.

Ingredients

  • 1 pound Ground Beef
  • 16 ounces, weight Cottage Or Ricotta Cheese
  • 2 cups Cooked Macaroni Noodles
  • 2 cans (15 Oz. Can) Tomato Sauce
  • ½ cups Mozzarella Cheese
  • ½ teaspoons Oregano
  • 1 Tablespoon Garlic, Minced
  • 1 Tablespoon Parsley
  • 1 teaspoon Basil
  • Pepper To Taste

Preparation

1. Brown ground beef with minced garlic added. Drain.
2. Add parsely, basil, oregano,pepper and tomato sauce. Bring to a boil, and then simmer while cooking macaroni noodles.
3. When pasta is almost done (al dente), drain and add to the meat sauce.
4. Remove from heat. Stir in cottage cheese and spread evenly in a greased 9×13 casserole dish.
5. Spread mozzarella evenly on top, cover with foil and bake at 350 degrees for 30 minutes.
6. Remove foil and bake for another 10 minutes or till cheese is melted.
7. Serve with salad and garlic bread.

I just wanted to come back and comment again….I reheated this dish today for lunch and I almost think I like it better as a ‘next day’ meal :) LOL Works great to tote to work and reheat for lunch and tastes good!

Made this for lunch today after church. I used Italian sausage instead of ground beef, and the dish is fabulous! Very easy to prepare.

Pretty good — I think it could use a tad more flavor but I can see how it works well with a large crowd or with picky eaters :) Easy to prepare too.
