Description

This is such an easy and flavorful hearty dish. Perfect for a busy weekday!

Ingredients

  • 2 cups Asparagus
  • 1 pound Polish Kielbasa (Hillshire Farms)
  • 15 ounces, fluid Canned Italian Seasoned Diced Tomatoes
  • 2 Tablespoons Pesto
  • 2 Tablespoons Olive Oil
  • 1 pound Penne Pasta

Preparation

1. Clean and cut asparagus into bite-sized pieces and set aside.
2. Slice kielbasa into bite-sized pieces.
3. Boil water for pasta and cook according to package. In the last 2 minutes of cooking, add asparagus. Drain and set aside.
4. Heat pan to medium/high heat and drizzle with oil. Add kielbasa and fry, turning over once to brown on both sides.
5. Add tomatoes and pesto and allow pan to simmer for just a few minutes.
6. Toss in pasta and asparagus to coat and serve.

I just made this without the asparagus, but only because I didn’t have any. It was still delicious! Thanks for the great recipe.

Made this earlier this week and we loved it! Very quick, easy, and tasty. Served it with a green salad and that was plenty since the dish has pasta, meat and veggies. Will make this again!
