Description

A “new” version of one of our family favorites. My kids devoured this; all of them asked for seconds. My husband and I enjoyed the change of flavor and texture. Look for the original version in my recipe box.

Ingredients

  • 1 whole Kielbasa
  • 6 whole Potatoes, Cubed
  • 1 whole Onion, Diced
  • 4 whole Carrots, Chopped
  • 1-½ cup Milk
  • 1 can Cream Of Mushroom Or Chicken Soup
  • 2 cups Shredded Cheddar Cheese, Divided

Preparation

Preheat oven to 375F. Grease a 9×13 glass dish or similar sized casserole dish. Peel and cube potatoes, put them in the dish. Dice the onion and the carrots and add them to the dish. Cut up the kielbasa into pieces about the same size as the potatoes, add to dish. Sprinkle liberally with black pepper and garlic salt.

In a seperate bowl, combine milk, cream soup and 1 1/2 cups of the cheese. Pour this over the other ingredients, stirring to incorporate. Cover tightly with foil and bake for 1 hour. Remove the foil and sprinkle remaining half cup of cheese on top. Bake for an additional 15 minutes.

I thought this was a WONDERFUL autumn supper dish! After preparing all the ingredients, I realized my hubby ate all my cheddar cheese (OH NO!), so I only had enough Monterey Jack cheese to add into the dish (not on top). And I also added about 1/2 cup of heavy cream to the dish, as well.

It was really, really good – it was a bit soupy – but, that was okay with me.. It was easy and only required my casserole dish, a cutting board, and an extra bowl to mix-up the wet ingredients – EASY!

The flavor was good but really soupy…not creamy at all! I’m pretty sure it was the fat from the kielbasa because eating felt like eating a bunch of liquid fat. If I make it again, I will probably fry the kielbasa first to get some of the fat out. But then it becomes an awful lot of work and time for one dish.
