One of my favorite dishes when I go out to eat is Penne Alla Vodka. I finally got up the courage to create it myself. Easy, simple and so good.
In a heavy-bottomed skillet over medium-high heat and add a touch of olive oil. Once oil is hot, add your pancetta, onion and garlic and saute. After about 2 minutes, add your mushrooms and mix. Saute for about another 5 minutes, mixing every so often.
Add your vodka and be careful. Mine did not flare up but it could. You could remove it from the heat for a second when you add it, just in case. Cook it down until all of the alcohol evaporates and then add cream. Mix and let it simmer for about 5 minutes.
Add your sauce, stir and let it simmer for another 4-5 minutes. Add your peas and stir. Let it cook another 2 minutes or until peas are cooked.
Toss with pasta and serve.
