Description

This meal is one of my family’s favorites. You will not be sorry for giving it a try! It is delicious!

This is a great freezer cooking meal.

Ingredients

  • 2 cans (10.75 Oz. Can) Cream Of Chicken Soup
  • 1 cup Hellman's Mayonnaise
  • 1-½ cup Colby Jack Shredded Cheese
  • 4 whole Boneless, Skinless, Chicken Breasts, Cut In Bite Size
  • ½ boxes (16 Oz. Box) Vermicelli Noodles, Cooked And Drained
  • ½ cups Parmesan Cheese

Preparation

Combine the cream of chicken soup, mayonnaise, cheese, cut up chicken breast, and cooked vermicelli noodles.

In a greased 9 x 13 pan, place the chicken mixture. Sprinkle the parmesan cheese on top.

Bake at 350 degrees for 50-60 minutes. You may need to turn the oven temperature to 250 degrees for the last 15 minutes, so the top doesn’t get too brown.

Notes:
I have substituted the mayonnaise with Miracle Whip, and the vermicelli noodles with spaghetti noodles when I didn’t have the others on hand.

This meal can be prepared and frozen, to be cooked at a later date. It’s a great freezer cooking meal.

This recipe was so simple and delicious! I used Sam’s club canned chicken breast for the chicken and it was wonderful. I am a Family and Consumer Science teacher and I will definitely use this recipe at school and share it on my website. Thanks for sharing this recipe!

I was not happy with the results – the vermicelli turns to mush, loses all shape and texture. I even undercooked mine b-4 adding it to casserole. Maybe if the chicken was pre-cooked and it did not need to be baked so long it would have more separation between pasta and sauce and chicken and not a smooth pile of baby food. Taste was just fair – a bit bland – as there is no added spice or herbs. The colby-jack cheese was completely overpowered, mixed all in as it was, and probably could be left out and not know the difference. I could taste the parmesan as I used fresh. But I will not be making this again. Sorry.
