Description

I first made this while working for a small, local cafe nearby. It was delicious, and even I loved it! Definitely not your everyday wrap!

Ingredients

  • FOR ASSEMBLY:
  • 4 whole Soft Wheat Tortilla Shells
  • ¼ heads Lettuce, Torn Into Sandwich-sized Pieces
  • 2 pieces Leftover Jerk Chicken Breast, Chilled And Shredded
  • 2 Tablespoons Spiced Rum Sauce (ingredients Below)
  • 2 Tablespoons Mango Salsa (ingredients Below)

  • FOR THE SPICED RUM SAUCE:
  • 1 container Vanilla Yogurt, 6-8 Ounce Tub
  • 2 Tablespoons Your Favorite Spiced Rum
  • 1 Tablespoon Vanilla Extract
  • 1 Tablespoon Brown Sugar
  • _____
  • FOR THE MANGO SALSA:
  • 1 whole Mango, Peeled And Diced
  • ⅓ cups Red Onion, Diced
  • 1 Tablespoon Lime Juice
  • ⅓ cups Chopped Cilantro Or Parsley
  • Salt And Pepper, to taste

Preparation

To make Spiced Rum Sauce, combine all of those listed ingredients (the yogurt, rum, extract, and sugar). Let sit in the refrigerator for an hour or longer to dissolve sugar and marinate a little.

Meanwhile, to make the mango salsa, combine the listed ingredients.

Once these are complete, it is now time to assemble!

1. Take the tortillas and slather on the rum sauce.
2. Layer on a couple of lettuce slices with some shredded chicken on top of that.
3. Finally, dollop on a couple of spoonfuls of mango salsa. Roll up, and enjoy!
