My husband’s favorite meal. Chicken is fried, covered in a tangy sweet and sour sauce, and then baked in the oven. We love it served on a bed of jasmine rice.
1. Preheat oven to 350 degrees.
2. Cut chicken into bite-sized pieces. Dip in egg and flour to coat.
3. Heat oil in a large frying pan over medium-high heat. Fry chicken until golden brown. Be careful not to overcrowd the pan to allow proper browning. Place chicken in a glass baking dish.
4. Chop onion into bite-sized pieces. Fry for 2-3 minutes. Mix with chicken in the baking dish.
5. In small bowl, combine, soy sauce, water, sugars, vinegar, garlic and salt. Stir and pour over chicken. (If you prefer a thicker sauce, add a teaspoon of flour or corn starch to the mixture.)
6. Bake in the oven for 30 minutes. Serve over rice.
