Description

Jalapeno Lime Chicken Alfredo With Cilantro.

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Tablespoon Butter
  • ½ whole Onion, Diced
  • 4 cloves Garlic, Minced
  • 1 whole Jalapenos, Seeded And Chopped, Or More Depending On How Hot They Are
  • 2 whole Chicken Breast, Cubed
  • ¼ teaspoons Ground Cumin
  • ¼ teaspoons Sea Salt
  • 3 whole Limes, Juiced
  • 1 cup Heavy Cream
  • 1 pound Linguine, Cooked Until Al Dente
  • 1 cup Parmesan Cheese
  • ½ bunches Cilantro, Chopped

Preparation

In large saute pan, heat olive oil and butter over medium-high heat until butter is melted. Add onion, garlic and jalapeno. Saute until onions start to caramelize. Add chicken breast, cumin and salt. Cook until chicken starts to lightly brown. Reduce heat to low; add lime juice and cook chicken until cooked through. Add cream to chicken, stir to coat chicken and heat cream. Add cooked linguine, Parmesan cheese and cilantro. Toss to coat, stir until heated through. Garnish with additional cilantro and lime.

This recipe was fantastic. I got a pasta maker for Xmas so had it with homemade fettuccine, and it was better than any restaurant version ever. Thanks for sharing.
