Description

This is a quick and tasty meal perfect for the upcoming milder weather.

Ingredients

  • 1 whole Medium Onion, Diced
  • 2 whole Garlic Cloves, Minced
  • 7 whole Fresh Basil Leaves, Chopped
  • 1 teaspoon Fresh Thyme
  • 1 teaspoon Fresh Oregano
  • 1 pound Smoked Sausage
  • 2 Tablespoons Olive Oil
  • ¾ cups Red Wine (I Used Cabernet Sauvignon Because That's What I Had On Hand, But A Merlot, Burgundy, Pinot Noir Or Any Red Wine That You Like Should Work Just Fine)
  • 28 ounces, weight Can Whole Tomatoes
  • 16 ounces, weight Can Garbanzo Beans (chick Peas), Drained
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

Begin by chopping up the onion, garlic and herbs (if you haven’t already done so), and cut up the smoked sausage in 1-2″ sections.

In a medium size skillet or sauté pan, brown sausage for a few minutes over medium heat. Remove the sausage from the pan and set aside.

Add 1-2 tablespoons of olive oil to the pan to just coat the bottom of the pan, and sauté the onion and garlic over medium heat until slightly transparent, about 5-7 minutes.

Next, add the red wine. Simmer the onion, garlic and wine for a few minutes until it reduces a little.

After the wine has reduced, add the tomatoes, garbanzo beans (drained), chopped herbs, salt, pepper and browned smoked sausage. If you’re using whole tomatoes instead of diced, mash them up just a bit at this point. Simmer over medium heat for about 15-20 minutes. Sauce will thicken slightly.

I made this today and it is really, really tasty. I left out the thyme and oregano, upped the amount of basil and used Madeira instead of red wine because it was all I had. I also added about a teaspoon of white sugar to cut the acidity of the canned tomatoes. It was really delicious.

Made this for dinner tonight. It’s a good recipe for a cold weather dinner. It’s easy to follow and tasted pretty good. I’ve got a couple of picky eaters who yucked at the garbanzos, but other than that it was good. I used the cheapest cabernet I could find and it worked just fine. It did get cool pretty quick after I put it in the bowls, so plan to eat it right away.
