This is a really easy “pantry staples meal”. It can be easily turned into stuffed bell peppers by gutting a few peppers and adding a can of tomato sauce and possibly some grated cheese.
Heat the oil over medium heat in a heavy bottom skillet or pot. Add onion and peppers and cook until tender. Add garlic and turkey sausage. Break sausage into smaller pieces as it browns.
Once the sausage is completely browned add uncooked rice and spices to into the skillet. Mix well and cook the rice for about a minute then add the can of tomatoes/juice and chicken stock. Mix well and bring it to a boil.
Once it begins to bubble reduce heat to low and let it simmer for 10 minutes or until liquids have absorbed and rice fluffs with a fork.
