Description

This is soooo easy I’m almost embarassed to post it! But trust me, it’s very tasty!

Ingredients

  • 1 whole 2-3 Pound Chuck Roast
  • 2 cans (14 Oz. Size) Stewed Tomatoes
  • 1 teaspoon Chopped Rosemary
  • 1 teaspoon Sage
  • 1 teaspoon Thyme
  • 2 Tablespoons Flour
  • ½ cups Water
  • Salt And Pepper, to taste

Preparation

I use a crock pot, but you could put this in a Dutch oven over very low heat. Season the meat with salt and pepper.

Put the chuck roast in crock pot and cover the meat with the stewed tomatoes. Let it cook on low heat all day – 8-10 hours.

Remove meat to a platter and put tomatoes and juices in a sauce pan. In a bowl, mix spices into the flour and stir in enough water in to make a thin paste. Whisk flour mixture into tomatoes and cook over medium heat until it thickens. I sometimes use a potato masher to break up the tomatoes if needed.

Serve the gravy with the meat. This is great with mashed potatoes but noodles would be good too!

This was very good. I expected it to be very tomato-y, but it wasn’t at all. It had a much more complex flavor. I added a pinch of turmeric, and about 1/2 cup chopped onion.
