Description

Raw onion rings topped with chunks of boneless skinless chicken breasts cooked with a mixture of honey, oil, orange juice, dijon mustard, curry powder and pepper. Amazing!

Ingredients

  • 1 whole Onion, Sliced Into Rings
  • 1 pound Boneless, Skinless Chicken Breasts, Cut Into Chunks
  • ⅓ cups Vegetable Oil
  • ½ cups Honey (any Type)
  • 3 Tablespoons Dijon Mustard
  • 3 Tablespoons Orange Juice
  • 1 teaspoon Curry Powder
  • ½ teaspoons Pepper

Preparation

Slice the onion into rings and place on the bottom of an 8 x 8 casserole. Top the onions with chunks of chicken (size of the chunks doesn’t matter). Combine the oil, honey, dijon, orange juice, curry and pepper in microwaveable container and heat for one minute in microwave. Pour over chicken and bake at 350F for 50 minutes to one hour.
