  • 1 pinch Salt And Pepper, to taste
  • 2 whole Chipotle Peppers
  • 2 cloves Garlic
  • 1 whole Lime, Juiced
  • 1 pound Firm White Fish (ie. Cod)
  • FOR THE BROILING STEP:
  • ½ pints Grape Tomatoes, Sliced In Half
  • 1 whole Bell Pepper, Sliced
  • FOR THE CHIPOTLE SAUCE:
  • 1 whole Chipotle Peppers, Minced
  • 2 Tablespoons Good, Quality Mayonnaise
  • ½ cups Greek Yogurt (or Strained Regular Yogurt)
  • 1 teaspoon Lime Juice
  • 1 pinch Sugar
  • 1 pinch Salt And Pepper, to taste
  • FOR THE ASSEMBLY:
  • 6 whole Heated Flour Tortillas
  • 1 cup Shredded Cabbage Or Lettuce
  • 1 slice Limes As Garnish At The Table

Preparation

Put all of the marinade ingredients (except for the fish) in a food processor and puree until smooth. Pour marinade over fish and allow to marinate for about 20 minutes in the fridge.

Slice some grape tomatoes and sweet or bell peppers and put them at the bottom of a baking dish. Then top it with the marinated fish. Pour any excess marinade over fish. Bake at 450 degrees F for 20 minutes or until fish is cooked and flaky.

Put all of the sauce ingredients in a food processor and puree until smooth.

To assemble the taco – Heat tortillas in the microwave, oven or over a griddle. Just heat them long enough to warm them up. Add some of the broiled peppers, tomatoes and fish to a tortilla. Then add the chipotle sauce and some shredded lettuce or shredded cabbage (traditional) for crunch. Add a spritz of lime juice. Enjoy.
