Description

Rice topped with creamy sauce, lots of veggies and crunchy noodles make this a quick and easy, great anytime meal!

Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts, Cubed
  • 1 Tablespoon Olive Oil
  • ½ cups Chicken Broth
  • 1 can (10 Oz. Size) Cream Of Mushroom Soup
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 4 cups Cooked Rice
  • 1 cup Chow Mein Noodles
  • 1 cup Diced Tomatoes
  • 1 cup Diced Pineapple
  • ½ cups Diced Green Onion
  • ½ cups Shredded Coconut
  • ½ cups Toasted Sliced Almonds
  • 1 cup Diced Green Pepper
  • 1 cup Shredded Cheddar Cheese

Preparation

In medium skillet prepare sauce by sauteeing chicken in olive oil until cooked through. Add chicken broth and allow to simmer about 5 minutes. Add mushroom soup, parsley and basil. Transfer to small bowl and set aside.

To serve: Into each of your serving bowls… Begin with rice, then sauce, and top with remaining ingredients to your individual tastes and enjoy!

Oooh! Yes, definitely mandarin oranges would go great on it too! :-) Although, sometimes I like it with just all the salty stuff and omit the coconut and pineapple on my own plate…. That’s what I like about them – they’re so adaptable!

This is great. I made it without chicken as a side dish for grilled chicken and it was a big hit!
