Description

As a casserole, this dish promises easy assembly with the convenience of a “fridge-hibernating” dish, meaning you can make it early in the week, store it in the fridge, and pop it in the oven when you need it. Because it’s such a rich dish, I like to keep it to special occasions only. However, I have been known to bake it when I need some comfort food. Sometimes, a girl’s gotta have her hashbrowns.

Ingredients

  • 2 pounds Frozen Hashbrown Potatoes
  • 1 stick Salted Butter, Melted
  • 1 whole Medium Yellow Onion, Diced
  • 1 pint Sour Cream
  • 2 cups Sharp Cheddar Cheese, Shredded
  • 1 can (10.75 Oz. Can) Cream Of Chicken Soup
  • 1 teaspoon Salt
  • ½ teaspoons Pepper

Preparation

Preheat oven to 350 degrees.

In a large bowl, combine all ingredients, being sure to mix thoroughly. Pour mixture into a greased 9×13 pan.

Place into the oven and bake at 350 degrees for 45 minutes. Turn up the oven to 450 degrees and bake for 15 minutes, lightly browning the top of the casserole.

It is my favorite potato casserole! I put corn flakes on top and bake it a few more minutes. It adds a little crunch.

So good, I have added ham, bacon or sausage to this. Makes a great dish for potlucks. Thanks so much.

As I gathered my ingredients, realized I didn’t have the cream of chicken soup needed, so I substituted with cream of onion soup and it sure was tasty. I have a feeling that this recipe would be good with just about any cream soup. Thanks for sharing.

My family doesn’t like sour cream, I can usually sneak it into certain recipes, so I cut the sour cream to 1 cup and added ham. It was gobbled up immediately. This would be a great dish if you ever need to take a meal to a family. It would go well with muffins and fruit. Thanks for the great recipe.

I wanted to make this so bad that I shredded 2 lbs of fresh potatoes, squeezed out the water and made it. The only difference was that some of my potatoes started to brown early since I’m not an expert shredder. I also added Ritz crackers to the top. The family loved it.
