Description

A good alternative to pie crust quiche. For kids or fun appetizers- Make a them in a muffin pan!

Ingredients

  • 4 whole Eggs
  • 1 cup, 2-⅔ teaspoons, ⅞ pinches Shredded Monterey Jack & Cheddar Cheese
  • 1-½ pint Frozen Hash Brown Potatoes, Thawed
  • 1-½ cup Frozen (thawed) Or Fresh Diced Broccoli
  • 1 cup Diced Ham (Turkey Optional)
  • 1 cup Low Fat Sour Cream
  • ½ teaspoons Salt

Preparation

Preheat Oven to 350 degrees

1. Press the hash browns onto the bottom and up the sides of a greased 9-in. pie plate, forming a shell.

2. Bake for 10-15 minutes or until brown and crispy.

3. Sprinkle with broccoli and ham.

4. In a bowl, beat the eggs, sour cream and salt; stir in cheese. Pour over broccoli.

5. Bake for 45-55 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

**For kids- Make a them in a muffin pan!

I made this and it turned out great. I made a few adjustments. I added one more egg and used leftover broccoli. I sauteed the broccoli and ham for a few minutes also. I would love to try it in muffin cups next time. Delicious!

Delish! Since I didn’t have any hash browns in the freezer, I just made this a crustless quiche…and it turned out fabulously. Had to force myself to stop eating it after my THIRD piece!
