Description

I used to love getting this sandwich as late-night food from Delux in Phoenix after a long serving shift. Now I live in Hawaii and have been craving it too long!

Ingredients

  • 2 pieces Chicken, Grilled And Split
  • 1 whole Zucchini, Cut Into 1/4" Slices And Grilled
  • 4 pieces Roasted Red Bell Pepper, Sliced In Strips
  • ½ cups Caesar Dressing
  • 2 Tablespoons Pesto, Homemade Or Prepared
  • 4 loaves Ciabatta Or Foccacia, Split In Half
  • 8 slices Mozzarella, Thinly Sliced
  • 2 ounces, weight Spinach Or Arugula

Preparation

Grill the chicken, zuchini and bell pepper strips on a grill or panini press.

Mix the Caesar dressing and pesto together.

Build the sandwich, dividing each component equally amongst the 4 sandwiches: bread, mozzarella, chicken, zuchini, dressing, bell peppers, spinach or arugula, and a little more dressing on the bread.

Grill the sandwiches on the panini press for about 4-5 minutes (no oil or butter necessary).

Serve with extra dressing to dip!
