Description

Easy to prepare, grilled naan bread topped with lots of garlicky vegetables makes a delicious pizza.

Ingredients

  • 2 whole Green Bell Peppers, Sliced (1-2 Peppers, Depending On Size)
  • 1 whole Yellow Onion, Sliced
  • 2 cloves Garlic, Chopped
  • 1 Tablespoon Olive Oil
  • 1 pinch Salt And Pepper
  • 1 pinch Dried Oregano
  • ¾ cups Pizza Sauce
  • ¾ cups Shredded Mozzarella
  • 2 whole Naan Breads (1/2 Per Serving)

Preparation

Preheat oven to 400 degrees.

In a glass baking dish, combine peppers, onions and garlic. Toss with olive oil, salt, pepper and oregano. Bake for about 20-25 minutes or until vegetables are cooked through and softened.

Preheat grill or grill pan to low heat. Spray or brush both sides of naan with olive oil and place on grill over indirect heat (or in grill pan). Cook naan until slightly browned and grill marks show (about 4-5 minutes, keep an eye on it). Take naan off grill and start to prepare pizzas by adding toppings onto grilled side. Spread sauce, then cheese, then vegetable mixture onto the naan and carefully place back on the grill. Close grill lid and cook for 5-8 minutes until crust is browned and crisp and cheese is melted.
