Description

Pork Tenderloin slow cooked in green chili enchildada sauce.

Ingredients

  • 1 package Pork Tenderloin, Enough For 6 Servings And That Will Fit In Your Crock Pot Or Dutch Oven
  • 1 can (15 Oz. Can) Hatch Green Chile Enchilada Sauce
  • 1 can Water (Use Sauce Can To Measure)
  • Coarsely Ground Black Pepper

Preparation

Place tenderloin in a crock pot or Dutch oven. Pour enchilada sauce over tenderloin. Fill can with water and pour over tenderloin. Sprinkle top of tenderloin with coarsely ground black pepper. Cover with lid and cook.

If cooking in a Dutch oven, place in the oven at 250F for 5 hours.
If cooking in a crock pot, cook on low for 8 hours.

Remove from vessel and shred with forks. Serve on tortillas with shredded cheese as a burrito, on nachos, or as an appetizer with Black Pepper & Olive Oil Triscuits.

Made this last night. It only needed about 6 hours to cook. It was absolutely delicious! I served it on corn tortillas with shredded cheese and sour cream.
