Description

With this easy, delicious, one-pot meal you’ll enjoy the snuggly feeling of a Sunday night dinner any day of the week.

Ingredients

  • 1 whole Chicken, Cut Into Pieces
  • 6 whole Potatoes (peeled, Cut Into Wedges)
  • 1 whole Lemon
  • 4 Tablespoons Olive Oil
  • 2 Tablespoons Dried Oregano
  • 2 Tablespoons Dried Thyme
  • 2 Tablespoons Dried Rosemary
  • 1-½ teaspoon Salt
  • 1-½ teaspoon Pepper

Preparation

Trim fat from chicken, wash in cold water and pat dry. Peel and cut potatoes into wedges. Place chicken and potatoes into a roasting pan. Cut lemon in half, squeeze juice all over chicken and potatoes, then rub cut side of the lemon all over the chicken as well. Pour and rub olive oil over all sides of chicken and potatoes.

Mix all of the herbs, salt and pepper together in a bowl. Then rub the spice mixture into the chicken and potatoes with the palm of your hand as you sprinkle the mixture all over (both sides of chicken) and tops of potatoes.

Place into a pre-heated 375°F oven and bake uncovered, for 1 1/2 hours, flipping the chicken every 30 minutes.

My husband is my toughest critic and when I simply read the name “Greek” chicken he made a weird face. He totally changed his tune after he ate it…he was raving about it and it is now one of his favorite recipes! (and mine too)
