Description

This simple pasta dish is filled with the bold flavors of lemon, feta and kalamata olives. It can stand alone or it pairs well with grilled chicken or shrimp.

Ingredients

  • 12 ounces, weight Farfalle Pasta
  • ¼ cups Lemon Juice, About 2 Medium Lemons
  • ½ cups Olive Oil
  • 1 teaspoon Sugar
  • ½ teaspoons Salt
  • ½ cups Pitted Kalamata Olives, Cut Into Quarters
  • ½ cups Crumbled Feta Cheese
  • Black Pepper To Taste
  • 2 Tablespoons Fresh Chopped Flat Leaf Parsley

Preparation

Cook pasta according to package directions, omitting the salt.

While the pasta is cooking, whisk together the lemon juice, olive oil, sugar and salt. Gently fold in the olives and crumbled feta cheese.

Drain pasta and toss with the sauce. Top with freshly ground pepper to taste and chopped parsley.

Yummy! I can’t wait to make this one. I love lemons! I know I will like this one. It seems like it will light (as in not a heavy weigh you down meal) and I like those types of meals.
