Flatbread pizzas are simple and delicious! This one gets topped with spinach, olives, and feta cheese.
Heat the olive oil in a deep skillet on medium high heat and add the garlic. Sauté for about 1 minute. Add the spinach and toss to coat in the garlic oil. Sauté for another 2-3 minutes, or until the spinach is wilted. Season with a pinch of kosher salt.
Preheat oven to 425ºF. Lay both pieces of flatbread on a cookie sheet. Top each flatbread with half the spinach, then half the mozzarella cheese. Sprinkle with as much feta as desired. Then top each flatbread with half the tomatoes, olives, and a few slices of red onion.
Bake at 425ºF for 8-10 minutes, or until cheese is melted and flatbreads are golden brown. Cool for a few minutes before slicing.
