Description

An easy, 30-minute meal for the summer, these grilled Greek chicken kabobs with tzatziki sauce are fantastic. The whole family will love them!

Ingredients

  • FOR THE CHICKEN KABOBS:
  • 2 Tablespoons Olive Oil
  • 1 whole Lemon, Juice And Zest
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • ½ teaspoons Dried Rosemary
  • ½ teaspoons Dried Oregano
  • 2 cloves Garlic, Minced
  • 3 whole Chicken Breasts, Cut Into 1-inch Pieces
  • 2 whole Red Peppers, Cut Into One Inch Pieces
  • 2 whole Yellow Peppers, Cut Into 1-inch Pieces
  • 1 whole Small Red Onion, Cut Into 1 Inch Pieces
  • FOR THE TZATZIKI SAUCE:
  • 1 cup Plain Greek Yogurt
  • ¾ cups Chopped Cucumber
  • 2 cloves Garlic, Minced
  • ½ teaspoons Dried Dill

Preparation

Preheat the BBQ to medium heat. In a medium bowl, whisk together olive oil, lemon juice, lemon zest, salt, pepper, rosemary, oregano and garlic. Add chicken cubes and toss until completely coated. Thread chicken, peppers and onion chunks onto skewers, alternating as you go.

Grill kabobs for 10–15 minutes, turning once, or until chicken is cooked through.

Meanwhile, in a small bowl, stir together yogurt, cucumber, garlic and dill for the tzatziki sauce. Refrigerate until ready to eat. Serve alongside kabobs.
